Cilantro Lime Cauliflower Rice

Ingredients

 

1 head of cauliflower

1 lime (or lime juice)

2 cloves of garlic (or 2 tbsp squeeze minced garlic)

1 handful chopped cilantro

 

Serves: ~5

 

Directions

 

1. Break entire head of cauliflower into florets.

2. Weigh all florets on food scale and write down for later.

3. Fill food processor with florets (might need to happen in a couple rounds) and "pulse" florets 5-6 times until it looks like rice until all florets are "riced."

4. Toss into large pan/wok. Dig out a center hole and drop in 2 tbsp minced garlic.

5. Sprinkle top with shredded fresh cilantro and lime juice. 

6. Cook on Medium heat for 6-10 minutes eventually stirring cilantro, riced cauliflower, and cilantro together.

7. Weigh out (or eyeball) the riced cauliflower into 5 equal portions (I put mine into snack baggies).

8. Eat right away (with chicken, with veggies, with sauce, etc.!) or save additional baggies in fridge as part of an easy ready-to-bake meal!
