Protein-Packed Low Carb Mini Cookies
Ingredients
3/4 cup almond butter (or PB2)
1 large egg
1 tsp vanilla extract
1/4 cup sugar free chocolate chips
2 tbsp ground flax seed
1/4 cup diced walnuts
2 scoops Protein Powder (I used SunWarrior Vanilla)
Serves: 16
Directions
1. Preheat oven to 375.
2. Combine all ingredients and mix thoroughly.
3. Scoop one at a time onto a cookie sheet and flatten with a fork. (You can make 8 large cookies with an ice cream scoop or 16 smaller cookies with a spoon)
4. Bake for 14-18 minutes or until cookies are *starting* to turn golden brown.
