Taco Turkey-Stuffed Peppers
Ingredients
4 Green Bell Peppers (have less sugars than yellow, red, and orange)
1 Package Ground Turkey- 93% Lean or Greater
16 tsp Taco Seasoning: Low Sodium
2 (10 oz) cans Rotel Tomatoes with Green Chilis
4 oz diced Jalapeños
Sriracha sauce
Serves: ~4
Directions
1. Wash, dry, and cut bell peppers in half length ways and tear out "tops."
2. Brown the ground turkey over the stove with desired seasoning/tenderizer.
3. In a large bowl, stir together 16 tsp taco seasoning, diced jalapeños, diced tomatoes, and browned turkey.
4. For immediate eating: lay out peppers curved side down and fill with 1/4 of the mixture from step 3. For baking, see step 7.
5. For future meals (meal prep) divide out the mixture from step 3 equally into 4 baggies and seal.
6. Place 2 pepper halves each in their own baggie (or all of them in a giant baggie if you'll be eating them soon).
7. Bake/Heat in preheated 350 degree oven for 20-30 minutes; take out, flip, bake for another 15-20 minutes. (Watch yours carefully the first time; every oven is different).
8. **I also microwave these at work since I can't use an oven for lunch and they taste great this way, too. (Microwave ~3-4 minutes)
9. Drizzle with Sriracha or other "sauce" of choice.
10. Put not eaten pepper/turkey baggies into fridge for additional future easy ready-to-bake meals!
