Buffalo Chicken over Garlic Cauliflower Rice
Ingredients
1 bag frozen boneless skiness chicken breast tenders
1/2 cup hot sauce of choice (I choose something lower sodium/low carb)
1 tbsp additional hot sauce
Chicken Seasoning
2 bags frozen broccoli
5 servings Cauliflower Rice (recipe here)
Serves: 5
Directions
1. Put entire bag of chicken into large crockpot. Set on high. Cook for 2 hours.
2. Dump partially cooked chicken into strainer. Drain and put back into crockpot.
3. Pour in 1/2 cup hot sauce. Cook on high for another 2-3 hours.
4. Spread layer of heated cauliflower rice onto plate. Top with layer of ~4.4oz cooked chicken (equals ~8oz frozen). A good rule of thumb I've found is that frozen chicken cooks down to about 56% of its frozen weight. Always guage your nutrition from frozen/raw/precooked servings.
5. Top chicken with additional 1 tbsp of hot sauce.
6. Pair with a side of steamed broccoli.
For Meal Prep:
1. Divide out cauliflower rice equally into 5 snack baggies.
2. Divide out chicken breasts equally into 5 baggies.
3. Divide out steamed broccoli into 5 equal portions in baggies.
4. When ready, spread layers on plate and microwave for ~2-3 minutes!
