d.i.y. Clean "Chipotle" Burrito Bowl

Ingredients

 

1 can black beans, drained and rinsed

5 oz raw red onion

1 Cauliflower Head, riced (recipe here)

5 oz raw jalapeño

5 oz raw banana peppers

70 oz frozen boneless, skinless chicken breasts

5 quart size freezer baggies

 

Serves: 5

 

Directions

 

1. Make riced cauliflower.

2. Cook chicken and portion out to 5 equal cooked portions (~8 oz cooked, each)

3. Portion out diced jalapeños, red onion, banana peppers, and drained/rinsed black beans into small bowls (you don't have to do this, but I find it makes things a bit easier).

4. Place baggie on food scale and pile in a layer of 8oz cooked chicken into the bottom layer of the baggie. Then pile in 1 oz red onion, 1 oz diced jalapeno, 1 oz banana peppers, and 1/5 can of black beans. Then weigh out 1/5 of your cauliflower rice as the top layer. Seal baggie. Do this for all 5 baggies.

5. When you dump out the baggie onto your bowl, plate, the cauliflower rice will be on bottom and all your toppings on top!

6. Microwave for 2-3 minutes (or heat in stovetop pan if you so wish)

7. Store other baggies in fridge or double-baggied freezer bags for easy ready-to-make future meals!
